Air-Fried Butternut Squash Nuggets

These air-fried butternut squash nuggets are a simple, healthy snack or side that’s packed with flavor and texture. Perfect for dipping or just munching on their own!

Ingredients:

- 1 large butternut squash, peeled and cubed

- 1/2 cup cornstarch

- Olive or avocado oil

- Salt, to taste

Instructions:

1. Toss the cubed butternut squash in a bowl with the cornstarch until evenly coated.

2. Transfer the squash to a colander and shake to remove any excess cornstarch.

3. Return the squash to a clean bowl (free of cornstarch) and drizzle with olive or avocado oil, tossing to coat.

4. Place the coated squash into the basket of an air fryer in a single layer.

5. Air fry at 400°F (200°C) for 20 minutes, shaking the basket every 5 minutes to ensure even cooking.

6. For extra crispiness, cook in additional 5-minute increments until the nuggets are golden and crispy to your liking.

7. Once done, remove from the air fryer and season with a pinch of salt.
